Sometimes my favorite foods are the simple ones. Nothing warms me up better on a cold day than mashed potatoes. Since potatoes are naturally gluten-free it makes a super side dish. This recipe I found on food.com, and it’s one I make all the time. It’s easy and so delicious! - 2 1/2 lbs red potatoes , unpeeled,quartered
- 3 cloves garlic , peeled
- 2 tablespoonsbutter
- 1/2 cup milk
- 1 teaspoon salt
- 1/4 cup grated Parmesan cheese
Put potatoes and garlic in lg pan.
Cover with water.
Bring to a boil.
Reduce heat and simmer for 25 minutes, until potatoes are tender.
Mash with the butter, milk, and salt.
Stir in the Parmesan cheese.
