Artichoke, Olive & Chicken “Salad”

I have recently decided to eat a Paleo Diet (the last 6 months).  Yes, I’ve lost some weight, but more than that – I feel good.

No more bloating, IBS…and on and on.  This way of eating eliminates all grains, gluten, processed foods, and processed sugar.  There’s a bit more to it, and it may not be right for everyone – but it works great for me.

I bring my own food to most parties now, and it’s always delicious and nutritious.  Even if you’re not eating Paleo, or Gluten Free – you will still LOVE this recipe.

SALAD INGREDIENTS

1 1/2 cups pitted kalamata olives (i used a mix of kalamata, black, and green – cause i like em all)

2 cups artichoke hearts in water or frozen (be sure to squeeze out excess water)

1 cup julienne-cut sundried tomatoes

8 ounces of salami, sliced into wedges (i used prosciutto because it doesn’t have sulfites and sulfates, just pork and salt)

1 1/2 cups diced grilled chicken

3 TBSP chopped fresh basil (about 10 leaves)

3 TBSP chopped fresh parsley (i accidentally bought fresh cilantro on accident so i used dried parsley, about 2 TBSP – turned out great)

 

DRESSING INGREDIENTS

2/3 cup Olive Oil

1/3 cup white wine (i used sauvignon blanc)

2 TBSP minced shallot

1 clove garlic, minced

1 1/2 tsp Dijon Mustard

1 1/4 tsp Italian Seasoning

1 tsp granulated garlic

1 tsp honey

1/2 tsp sea salt

Freshly ground black pepper to taste

 

HOW TO

1. Combine all salad ingredients in large bowl, set aside

2. In jar with tight fitting lid, combine the dressing ingredients, then give it a good shake to mix it all up

3. Pour dressing over the salad, and toss it to coat.

4. Cover the salad and refrigerate it until needed.

5. Stir again before serving.

**Serves 4-6 large servings, but it’s rich so I only need a little serving to satisfy my hunger!

 

Notes: Tammy suggests making this the day before you serve it so it can get all “yummified” <– great suggestion

She also says that have fun with this recipe, if you want to add things like bacon or cauliflower, or switch things out that you already have in your cupboard that it’s a great idea!
